  • The seventh beer in our 2018 hop-forward series originally released in July , Guillotine brut IPA is back, now in cans as well as kegs. This style uses extra amylase enzymes to promote a more complete fermentation of the sugars from the malt, giving a beer that is completely dry, hence the name (“brut” being a designation for the driest sparkling wine). To enhance the vinous character we have used Hallertau Blanc, Huell Melon, Nelson Sauvin & Motueka hops, giving tangy white grape and tropical fruit notes.

  • This beer was brewed in collaboration with Electric Brewing, from Bath.
    Speciality malts were chosen to complement the character brought by the fruit, which was added prior to souring.
    It was lacto-soured in kettle before boil, then a mixed culture was pitched for primary fermantation.
